A few shows I like that came out in the 2 1/2 years since this thread started...
Naruto
A neat bunch of characters, with the lead being a likeable screw-up I just can't help but root for. An ever-growing cast of well-defined supporting characters (Rock Lee is the coolest; I think Sasuke Uchiha is an overrated emo douche sometimes, though) Some nasty, hissable villains (Literally--Orochimaru has all sorts of snake allusions and powers). And the voice cast is superb--it's mostly the Digimon crew (Steven Jay Blum, Dave Wittenberg, Colleen O'Shaunessy)
Bleach
New, but very interesting. Concept-wise, Ogre liked to compare it to "Yu Yu Hakusho if it stayed about ghosts instead of turning into a Dragonball rip-off"

If you like Gundam, you'll probably like this. Whiny kid as hero, cool robots (they air surf. AIR-SURF.) Government conspiracies. A mysterious female lead with an evil clone of some sort ("Anemone the Anime Enemy" Ogre calls the clone lol) They even did what I have to view as a sortof tribute to the original Gundam's Ramba Ral/Hamon arc.

I heard a lot of complaints about how "stupid" this show is when it started. Well, yeah...but not any more "stupid" really than things like Aqua Teen Hunger Force. It's surreal. It doesn't make sense most of the time. It's rife with parodies of other anime (all the villains dress like Saiyans and have inane attack forms). The main character sounds like Elvis (Richard Epcar, who also did Etemon, hams his Elvis impression up like 1000% here). The other main characters are talking jelly, a guy with flatulence problems, a mini-Stay Puft-like guy they abuse constantly, a girl with pink hair (who even sounds like Mimi Tachikawa), an asskicker with strawberry ice cream for a head, and an utterly insane pointy brown Pac Man-looking guy.
